Blackberry Tomatillo Margaritas
A splash of tequila, the sweetness of the blackberries, bite of lime, and flavorful tomatillo create a perfectly unique margarita for you to add to your Cinco de Mayo menu this year!

Blackberry Tomatillo Preserves
- 4 ripe tomatillos large
- 8 ounces fresh blackberries
- 2 1/2 cups unrefined cane sugar
- Juice from 1 lemon
Margaritas
- 3 oz tequila
- 3 tablespoons blackberry-tomatillo preserves
- 1.5 ounce lime juice
- Coarse salt, for rim
- Splash of club soda
- A handful of blackberries, for serving
Blackberry Tomatillo Preserves
Peel and chop the tomatillos. Combine blackberries & tomatillos in a blender or food processor and puree until smooth (should be about 2 1/2 cups of fruit).
Mix 2/12 cups sugar and the pureed fruit in a saucepan. Add the lemon juice and stir.
Allow it to come to a full rolling boil for one minute, then decrease the heat and continue to cook for an additional 15 minutes. Skim any foam off the top, and pour the preserves into a jar.
