S.O.S. Lao Fried Chicken

Craving Lao fried chicken but don’t have time to decode Mom’s signature recipe of “a little bit of this, a little bit of that” measurements - I’ve got you!

Here’s a simple marinade recipe that’s easy and can be used for either fried, grilled or air fryer chicken.

Marinade (for 1kg chicken wings):
1/2 tsp salt
2 tsp sugar
1/2 tsp msg
1 tsp soya sauce
1 tsp fish sauce
1 tsp oyster sauce
1/2 tsp black pepper
1 tsp turmeric powder
4 cloves of garlic minced

Mix everything thoroughly, then cover and refrigerate for at least 30 minutes—though longer is better, and overnight is best for maximum flavour.

Cooking Methods:
To Fry: Heat oil in a pot. Once hot, add the chicken and cook for six minutes on one side, then flip and cook for another six minutes.

To Grill or Air Fry: These wings also cook beautifully on a grill or in an air fryer.

Mom’s recipe will always be superior, but this one is also delicious and will satisfy your craving.

Tang Yuan | Nam Vaan Bua Loy

Tang Yuan, or Nam Vaha Bua Loy, is a dessert often enjoyed on the last day of Lunar New Year. Its round dumplings symbolize unity, wholeness, and family reunions.

There’s something special about gathering around a bowl of Tang Yuan—the sweet and smooth broth and soft dumplings feel like a warm embrace, reminding us of the joy of togetherness and the simple comforts of tradition.

This version that my family enjoyed, features soft chewy dumplings and a sweetened egg.

Ingredients:

Sweet Dumplings
250g steamed purple yam
200g glutinous rice flour
150ml water

250g steamed yellow yam
200g glutinous rice flour
100 ml water

*gradually add water to each batch as you mix and adjust amount as needed (eg. more water if dough is too hard or less water if dough feels already supple)

200g glutinous rice flour on hand for dusting the formed dumplings to prevent them from sticking to each other

Sweet Coconut Broth
4 cups water
1 1/2 cup sugar
1 cup coconut milk
1/2 tsp salt

Sweetened Eggs optional
